Ingredients:

  • 1 cup of quinoa
  • 1 cucumber, diced
  • 1 large tomato, diced
  • 1/4 cup black olives, chopped
  • 1/4 cup red onion, finely chopped
  • 100 grams of crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Juice of 1 lemon
  • Salt and pepper to taste

    Instructions:

    1. Cook the quinoa: Rinse the quinoa well under cold water. Then, place it in a pot with 2 cups of water. Bring to a boil, cover, and reduce the heat to low. Cook for 15 minutes or until the water is absorbed and the quinoa is tender. Let it sit for a few minutes, then fluff with a fork.
    2. Prepare the ingredients: While the quinoa cools, chop the cucumber, tomato, olives, and onion. Place them in a large bowl along with the crumbled feta cheese.
    3. Mix the salad: Add the cooled quinoa to the bowl with the vegetables and feta. Pour in the olive oil, balsamic vinegar, lemon juice, salt, and pepper to taste. Toss everything together to combine.
    4. Garnish and serve: If desired, garnish the salad with fresh basil leaves. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld even more.
