Monday’s

Monday’s. The one day of the week where we are already rushing for hump day and today they say that the day after the super bowl is one of the least productive days of the week. Well, I was definitely one of those folks today. A long hard day that the only thing that kept me awake was at least 3 cups of coffee at the least.

Anyway, enough about Monday. I am home, relaxed and trying to figure out what’s good to eat. I scavenged around my fridge to see what I can find for dinner, and thought to myself... fish. The flounder was a day old, which isn’t bad so I decided to bronze it on a cast iron with some lemon herbs, chili, crushed garlic pieces, and plenty on onions.
