Cherry Muffins

Do you like muffins? As I've been sharing with you yesterday, this weekend I made a short trip to my sister. We like to cook and to bake together so we decided to make some cherry muffins. If it were possible I would eat cherries in every dessert. This much I like them so every time I want to make something for dessert, cherries are the first thing that comes on my mind.
Next I want to share the recipe with you. Feel free to give it a try if you want.

For 16 muffins, you need:

400 g sour cherries
4 eggs
3/4 cup of sugar (more exactly 140 g)
1 cup of flour (150 g)
4 tablespoons of melted butter
1 teaspoon vanilla extract or vanilla sugar

  • Separate whites from the yolks. Start beating the yolks with some salt powder, vanilla extract and melted butter until they are white.
  • The whites need also to be beaten until you have a soft foam. At this point, add the sugar gradually.
  • The next step is to combine the yolks with the whites, easy so that we do not lose all the built-in air by tapping. Add the flour then pour it into the muffin forms.
  • Place the cherries over it.
  • Bake the muffins at 180°C for 25-30 minutes.
  • If you want you can add powder sugar when the muffins are ready
