TWO INGREDIENTS ONLY! That's some crazy stuff I know haha! I promise it's finger-licking!
When I tried them for the first time I fell inlove with the taste of them and the idea that I shouldn't even feel guilty about eating them. However, I didn't seem to master making them in the perfect shape, which didn't have anything to do with the taste of them- it just didn't look too appealing on the plate. However, I figured out where my problem was and it turned out it is not a matter of practice or crazy skills in the kitchen (phew!). Sooo I'm planning on sharing it all with you today. The best about it is that they only take 5 min to prepare and no more than 10 to make!
Ingredients
2 medium ripe banana
2 medium eggs
Butter or oil for the pan
Optional extras:
1 tablespoon cocoa powder or protein powder
1/4 teaspoon baking powder for fluffy pancakes
1/4 teaspoon vanilla
1/4 cup fresh berries
pinch of cinnamon
Instructions
Peel the bananas and break them up into pieces in a bowl. Gently mash them using a fork. Add the eggs and stir until you have a custard-like consistency. The batter will be quite runny and should have a few clumps of bananas.
If you want you can always add some protein powder to the mix. You can either use it as a substitute for flour and add enough to make the consistensy of the mix the same as regular pancakes (that's for the real protein lovers) or add about a tablespoon to boost the flavour and the protein levels of your breakfast. If you want you can also add 1/4 teaspoon baking powder in order to make the pancakes more fluffier. 1/4 teaspoon vanilla, pinch of cinnamon or 1 tablespoon coco-powder can also be added as flavour boosters even though I quite like them with just bananas and eggs to be honest.
Heat a griddle over medium heat and melt in about 1/4 teaspoon of butter in the pan. Drop the batter on a hot griddle: Drop roughly 2 tablespoons of batter onto the hot griddle. Avoid pouring a larger amount, esspecially if you have not added a larger amont of protein powder, as there would be nothing in the mix that would hold it together and the pancakes would break into pieces easily (this was the major reason for my failed first attempt).
Cook for 1 minutes or until the bottoms look browned and golden when you lift a corner.
Gently flip the pancakes and cook for another minute on the other side.Transfer the cooked pancakes to a serving plate and continue cooking the rest of the batter. Try using a spatule that would be big enough to be abple to pick up the entire pancake in order to be sure there won't be any pancakes that tear.
Serve Pancakes warm; they are best when eaten fresh off the griddle and still warm. Serve with maple syrup, honey, or any extra toppings. I would deffinitely give fresh berries a shot!
