At every holiday season families have their traditions. Whether it is Christmas, Easter, New Year, or any other etc. Most people have their traditions when it comes to what they have for dinner, desserts, cakes. In my family we are no exception. To day we have a cake that we have every year on the same day. This is our Easter cake. Here is the recipe. It is easy to make. Also you can make it well in advance and freeze it with the icing. All you have to do when defrosted, is to decorate with chocolate or whatever sweets you prefer. It is a rich cake, but it is only that once in a year.
Ingredients for the cake:
- 5 egg whites
- 200 g of ground almonds
- 100 g sugar
- 1 teaspoon baking soda
Instructions:
Beat the egg whites stiff with sugar. Put in baking powder and finally mix in ground almonds. Have a shape of approx. 20 cm. in diameter and fry at 175 degrees for 35-40 minutes.
Ingredients for the icing:
- 5 egg yolks
- 1 dl. whipping cream
- 100 g sugar
- 1 teaspoon vanilla sugar
- 150g of melted butter
Instructions:
Stir together all the ingredients, except the butter. You melt the butter in a separate pot. Place under medium heat and constantly stir until boiling. Remove the pot from the heat and pour in the melted butter while whipping strongly. Leave it for a few hours or overnight to cool completely.
Spread the cake and decorate. Store in a refrigerator.

Unfortunately, our family has no dessert tradition other than maybe for Thanksgiving. I like to have pumpkin pie, but I don't think everyone in the family looks forward to pumpkin pie like I do. They'd prefer to eat some other kind of pie. We do have Easter dinner, with ham at the center, but that's about it as far as Easter goes. Food-wise, Thanksgiving and Christmas tend to get more attention.
I think it's great that you have this cake tradition. And I think I need to try the recipe. :)

It is nice to have some traditions. But as you say, some holidays get more attention than otheres. Chistmas just might be the one here too, which has the most traditions. Both when it comes to food and how we decorate our home. Usually it it the same stuff used every year. I think traditions serves a purpose.
