Ingredients:

1.5 lb chicken thighs
2 tbsp olive oil
1.5 tbsp chicken bouillon
2 cups chicken broth
1 stalk ginger sliced diagonally
4 oz bean thread (cellophane) noodles
1/3 cup green onions chopped

Place 2 tbsp olive oil in pot and brown the ginger and chicken over medium heat for 5-7 minutes. Next, add your chicken broth and chicken bouillon and stir for 10 minutes.
