Pizza

When you are making pizzas with family and friends, it is nice to have a wide choice of toppings so that everyone gets to make a pizza they are excited about.BUt when it comes to your turn, you neednt feel that you have to overload your pizza with a huge array of toppings..its far better to keep it simple.most of your work has got to be creating a delicious pizza base, so you really want to taste that as much as anything else.just choose two or three things to scatter on it,along with herbs,salt and pepper.

To make pizzas
Ingredients:flour , salt, yeast,olive oil,sugar or honey,pepper.

Step1
Makeup the white dough,knead it until it feels very smooth and strechy..infact until you feel that you just can't knead it any longer..put the dough back in the bowl,cover it with some cling film or a damp tea towel and leave it in a warm place for 1 to 2 hrs..when it will swell to about double it size

Step 2
meanwhile, make the tomato sauce.peel the garlic clove,place it on the board and crush it with the flat of the knofe blade until it turna into a rough paste.tip the tinned tommatoes into the pan with olive oil and garlic..break them up with wooden spoon or a potato masher..add a tea spoon of sugar.. turn on the heat to medium and let the tomatoes bubbl furriously stirring every now and again to make sure that they don't catch on the bottom of the pan..let them bubble for abput 5 to 10 minutes, until some of the juice has evaporated and you have a thick,pulpy sause...then turn off the heat and let the sause cool..

Step 3
When the dough has risen,press it down with your palm and take it out of the bowl..divide into 4

Step4
Turn on the oven to its hottest setting..the ideal pizza cooking temperature is 250 to 300 degree ..put the baking sheet in the oven to get hot.

Step 5
Sprinkle some flour on the work surface, take one of the though pieces and shape it roughly into a circle..then continue to shape it either with your hands or with a rolling pin.

Step6..
Oven gloves on..get the hot baking sheet out of the oven..carefully lay 1 or two bases on the hot sheet..spreed quarter of the tomatoe sauce over the pizza,leaving a bit of bare dough around the edge.

Step 7
Topings...you might want to use
Chopped mozzarella cheese,chooped garlic, dried oregano , cooked bacon,sliced mushrooms, slices of pepperoni,prawns, anchovies, capers depending on your choice. ...after choosing any or someof these as your toppings, trickle a very little salt and grind of pepper..

Step 8
put your oven gloves back on and the tray back in the oven..bake the pizza for 8 to 10 minutes,until it looks cooked and the cheese is bubbling and spoted with brown....

Eat as soon as you can.

Tools
Chopping board, knife, wooden spoon or potato masher,baking sheet and rolling pin..
