Salmon blinis

Hello friends,

When I moved out from my parent`s home last year I was really confident in my abilities, so I thought I know most of the things that a grown person is expected to do. Of course, it turned out the reality was different. Living on your own is thousands times more difficult than every teenager expects, trust me. For the past year I have been struggling with many home activities, but at least I learned something important – how to make fast, easy, and cheap snacks and drinks.
So, if you are tired of eating awful snacks at parties, this 15 minutes recipe is totally something that you should try. Smoked salmon blinis are the best party food not only because of the taste, but they also look irresistible.
You will need:

  • 1 cup of self-rising flour
  • 1 large egg
  • 1ts olive oil
  • 1 cup of semi-skimmed milk
  • 150 gr smoked salmon.
  • and unsalted butter

Preparation: Place the flour and a pinch of salt in a large bowl. Make a well in the centre, crack an egg in and add a tablespoon of oil, then beat into the flour. Whisk in the milk until you have got a smooth batter. Put a large frying pan on a medium heat and add a small knob of butter. Once hot and the butter is melted add tablespoon of batter to the pan to make your blinis. Cook around one minute on each side and flip them over when they turn gold on the bottom. Transfer the cooked blinis to a plate and continue with the remaining batter until it is all used up.
A good tip is to make the batter the night before and leave it covered in the fridge.

Team waves of smoked salmon with cream cheese, cucumber and lemon juice and you are ready.
