Ingredients
• 250 g pumpkin flesh
• 200 g sugar
• 4 eggs
• Juice of half a lemon
• 1/2 teaspoon cinnamon
• 1 pinch of salt
• 100 g ground almonds
• 100 g almond pins
• 200 g flour
• 2 teaspoon baking powder
Preparation
- Make the pumpkin flesh with a fine grater small (as in potato cookies).
- Beat eggs and sugar until fluffy, then mix in the remaining ingredients. Finally add the "Pumpkin mash". A slightly chewy cake mass must occur, depending on how watery the pumpkin. If necessary put a little flour in.
- Put all in a buttered bundt cake pan and bake it at 180 degrees 50 minutes (possibly longer baking time, sometimes the baking time is 60 minutes).
- After 1 to 2 days the cake tastes best. If you like covers it with lemon icing or powdered sugar.
