ya south american gelato "ducle de leche" is awesome. We perceive "dulce de leche" or sweet milk or candy milk as a type of caramel flavor. In south america it is the name of the type of ice cream basically 50% cream and 50% sugar and whatever ingredients left over for the flavors.
