Cheating Can Be Good Sometimes... But Only When You Run Out of Chutney

My family loves chutney and in my younger days I have often cooked my own chutney from the peaches and apricots growing in my backyard. With age came laziness and it is easier to buy chutney now. Last week I was shocked by how expensive chutney has become.

With no fruit available at the moment, this quick cheat recipe works out more economically, it yields more chutney than the small bottles in the shop and you can get creative by adding other ingredients to change the taste.

Basic cheat chutney recipe:

Ingredients:

12,5 ml cooking oil
1 large onion, finely grated
1 can (450 g) smooth apricot jam
125 ml brown vinegar
5 ml cayenne pepper

To make:

Sauté onions in the oil until soft. Leave to cool and add the apricot jam and cayenne pepper. Stir. Slowly add enough brown vinegar to make a mixture with the consistency of chutney, but not too runny.

I sometimes sauté green peppers and grated apple with the onion and also add freshly ground black pepper.

Spoon into sterilized jars, seal and keep in fridge once opened.

Yield: 500 ml chutney.
