How to prepare light soup the Ghanaian way

Ghanaian light soup is fresh, light and delicious. It also has medicinal properties as it is mostly recommended to convalescents.

A hot bowl of light soup brings the best relief when you have a cold/ flu.

Not only is it easy to cook but also pairs nicely with rice, yam, gari, kenkey and fufu. This could serve as the perfect dinner for people on a weight loss journey.

Home from work late? Grab your bowl of Ghanaian light soup and your blanket. Turn on your favorite TV show and enjoy!

Ingredients

1 kg fresh fish

2 small lime

2 medium-sized onion

3 medium-sized tomatoes

1 small tin of tomato puree/paste

A handful of pepper

Spices(ginger, garlic or fish spice)

Preparation

Clean your fish with a piece of lime in a bow of water. Properly remove any innards.

Season well with ginger, garlic and onion mixture. You can also add some salt and fish spice.

Marinate for a couple of hours. Put into a medium-sized saucepan on medium heat and bring to a boil for about 5 min. Take out the fish from the stock.

Peel and wash your onions, tomatoes and peppers. Add them to the stock.

Fill 3/4 of the saucepan with water.

Turn up the heat and bring to a boil. Boil until the vegetables are soft.

Reduce the heat and remove the vegetables. Blend until smooth.

Pour back into the saucepan.

Add water until it's a little above the quantity you want.

Add your fish and salt to taste. Bring to a simmer over low heat for about 5 mins.

Your Ghanaian fresh fish light soup is ready. Serve hot with your fufu, boiled rice or yam. The magic of this soup is that it is the base for every soup.
