Really? Do they have to be young?
The leaves don't get bitter or toxic as they mature, they just get tough. But just like the leaves of the mulberry in my Free Hotel Salad - Wild Style, if you get the newer leaves from actively growing branch tips, they will still be good. Here in Oregon's Willamette Valley, the European linden are done since the trees are putting all their energy into flowering. But those trees don't move from year to year, so you can count on them in the spring and early summer! You, too, can become a human giraffe! :D

I remember when I little I was eating leaf buds from that tree. Not sure if that is the right name. Right before the leaves pop they have those swollen buds... those were nice :)
