Materials needed:
500 grams of beef (to make broth)
2 star fennel items
2 bay leaves
1 black cardamom grain
1 cinnamon stick
1 tablespoon Sichuan pepper (can be replaced with regular white pepper)
2-3 pieces of Mandarin orange peel
1 tablespoon chili sauce
1 tablespoon dark soy sauce
2 tablespoons light soy sauce
2 tablespoons of shaoxing wine or rice wine
6 stone sugar grains (can be replaced with 1 tablespoon of regular sugar)
4 grains of garlic
4 thin slices of fresh ginger
3 spring onions
How to cook:
- Cut the beef in a 4 × 4 cm dice, then put it in the pan.
- Add all seasonings and sauces, then pour 80ml or 90ml water.
- Heat over a large fire to boil, then reduce the heat and ungkep for 2 hours.
- Boil the noodles until cooked and put in a bowl.
- Add the beef and beef broth pieces to the top of the noodles.
