Ingredients
Ribs and goat bones - 500 grams
Legs and innards of goats - 250 grams
Leaves greetings - 2 sheets
Citrus leaves - 4 sheets
Lemongrass, crushed - 1 stalk
Galangal - 3 cm
Cayenne pepper - 10 pieces
Sweet soy sauce - 2 tbsp
Salt - 1 tbsp
Sugar - 1 tsp
Water - 1.5 liters
Oil, for sauteing - 3 tbsp
Fried onion - to taste
Ground spices:
Onion - 15 grains
Garlic - 8 cloves
Pecan, roasted - 8 seeds
Coriander, roasted - 2 tsp
Cumin - 1/4 tsp
Ginger - 2 cm
Turmeric, burn - 2 cm
Step by step :
Boil the goat with bay leaves, orange leaves, lemongrass, and galangal until half cooked. Raise and clean goat meat and offal. Dispose of water.
Boil the goat back with new water (1.5 liters). Set aside.
Heat the oil. Saute the finer spices until fragrant. Remove and put in the meat stew.
Enter whole cayenne pepper. Stir well.
Season with salt, sugar, and sweet soy sauce. Stir well and correct the taste. Lift.
Ready served with a sprinkling of fried onions.
