Vegan Tomato and Basil soup
This vegan tomato and basil soup contain the most delicious flavors of Italy. It is very easy to prepare and perfect to enjoy at home in the cold season.
This vegan recipe is just out of the pot and the aroma it leaves at home is irresistible.
What I love about this recipe is that the taste is sophisticated but both the ingredients and the procedure are incredibly simple. It's perfect for enjoying a cold afternoon, preparing for the family or the person who makes your heart beat very hard.
We decided to accompany our soup with homemade croutons. We just cut vegan bread into small cubes and bathe them with a little olive oil, bake for a few minutes and that's it. You can use the toaster oven to prepare them.
Vegan Tomato and Basil soup
Preparation: 5 minutes
Cooking time: 40 minutes
Total: 45 minutes
Serves: 5 servings
Ingredients
♡ 10 red tomatoes (medium size) in pieces
♡ 1/2 white onion, finely chopped
♡ 3 cloves garlic, finely chopped
♡ 1 cup celery, finely chopped
♡ 2 cups vegetable broth
♡ 1 tablespoon olive oil
♡ 1/2 tablespoon dried basil
♡ 2 teaspoons mascabado sugar
♡ 1 teaspoon salt
♡ 1 cup small pieces of baguette bread + 1 cup toasted pieces of baguette bread
Instructions
In a large pot over medium-high heat place olive oil and when hot add onion, garlic, celery, and tomato. Cook for about 6 minutes or until the onion begins to become translucent.
Add 2 cups of vegetable broth, bring to a boil, immediately reduce heat to a minimum and cover. Let cook for 15 minutes and add the pieces of bread, salt, sugar, and basil, stir well, cover the pot and cook for another 15 minutes.
Check the salt point, you can add a little more dried basil at this point. Remove from heat and blend 3/4 of the soup just enough to disintegrate the bread. You can blend the entire contents of the pot but I prefer this soup with a heavier consistency.
Return the liquefied contents to the pot, stir well and serve, you can reheat if you wish. Add pieces of toasted bread when serving.
