Pancakes for the whole family

I love pancakes.

My ultimate pancake of choice would be fluffy American-style pancakes with crispy well-cooked bacon and maple syrup.

This is a 'healthier' recipe. Wheat-free. Sugar-free. Milk-free.

In the past I've tried making lots of those recipes for "healthy cheesecake using just 2 ingredients..." only to be left disappointed but I actually really like this recipe!

It's a good one for kids to eat too. Easy for them to hold from 6 months old and can have them plain, or with just fresh fruit, or some avocado.

Ingredients:
2 bananas
2 eggs
1/2 cup oats
1/2 teaspoon baking soda

Method:
Combine all the above ingredients in a blender and blend until smooth. Leave to stand for 10-20mins.

Heat non-stick frying pan and fry "dollops" (one of my favourite words) until golden brown on both sides.

Top with anything you fancy. Some ideas below...
