Crockpot Smoke Pork Skinless Shank Lau Lau

Ingredients:
▪ 1 to 2 bags Luau leaves
▪ 3-4 pound Smoke Pork Skinless Shank
▪ 1 tsp liquid smoke for added smoked flavor - optional
▪ 1 crockpot liner - optional but recommended for easy clean up and keep the moisture in.

Direction:
1. In a large pot, bring water to a boil. Rinse Luau leaves, cut and place in boiling water. Cook for about 3 minutes, or until wilted.
2. Peal taro root and cut into small cubes, about 1 inch. Soak in water until ready to use.
3. Peal skin off stems and cut to small pieces, about 1 inch.
4. Place crockpot liner, then layer your pork shank on the crock pot, then layer taro root, stems, and cover with luau leaves. You can also add 1 tsp liquid smoke if you want more smoke flavor.
5. Cook on high for about 2 hours and then to low for about 8 hours or cook on high for 8 hours.
6. When luau leaves until dark green and soft.

Notes:
▪ Do not eat under cook luau leaves, it will make your throat itchy.
▪ Do not put luau leaves on the bottom, it will be salty from the pork drippings.
▪ You can also substitute luau leaves with spinach but will not taste the same.
▪ It will taste even better the next day.
