Pork Sari Sari (Pork with Mixed Filipino Vegetables)
Ingredients:
▪ 2 1/2 pounds pork butt, sliced thinly
▪ 1/2 pound bitter melon, deseeded and cut into 1/2 inch slices
▪ 1/2 pound Kabocha squash, deseeded, peeled and cut into 1/2 slices
▪ 1/2 pound long beans, both ends trimmed and cut diagonally into 2 inches slices
▪ 2 large tomatoes, cut into chunks
▪ 1 large onion, sliced
▪ 5 cloves garlic, minced
▪ 2 - 3 tablespoon fish sauce (adjust to your taste)
▪ 1/2 teaspoon black pepper
▪ 1/2 cup soy sauce (I used Aloha brand)
▪ 1 cup water
▪ oil for sautéing garlic and onion
Direction:
1. Heat oil in a wok and sauté garlic and onions for about 5 minutes.
2. Add the pork and fish sauce. Simmer for about 10 minutes or until meat turned browned and tender.
3. Add in tomatoes and cook for about 2 minute.
4. Add in Kabocha squash. Cook for about 5 minutes
5. Add the rest of vegetables, soy sauce, and water.
6. Simmer for 10 minutes or until vegetables are thoroughly cooked and most of the water is gone.
Enjoy with rice.
