medha vaada ya ulund vaada ya urad daal vaada moorkh, dosa aur vaada kee trinitee mein teesaree vastu hai jo hamaare desh mein lokapriy rahee hai. yah dakshin bhaarateey menoo ka sitaara hai. medha (tamil mein naram arthaat) vaada ek phritar hai, jo donats jaisa dikhata hai, andar kurakura aur naram andar hai. vaada vivaah, tyohaaron, pooja dinon aur kaee avasaron mein tamil lanch menoo ka ek bilkul jarooree hissa hai. medoo vaada ko shaam ke snaiks ke roop mein garm chaay ya kophee ke kap ke saath parosa ja sakata hai. ise chatanee ya saambhar ke saath idalee, pongal, dosa ityaadi jaise dakshin bhaarateey naashte ke vyanjanon ke lie bhee ek paksh ke roop mein bhee kaam kiya ja sakata hai. yah dakshin bhaarateey rasoeeghar se ek svaadishtata hai.

chilantro - mutthee kata hua
jeera beej - 1/2 chhota chammach

naariyal ke tukade
tareeka
urad daal raat bhar ya kam se kam 1/2 ghante sokhen.
paanee ko nikaalen aur daal ko jitana sambhav ho utana paanee ka upayog karake graindar / blendar / miksee mein pees len.

is urad daal ballebaaj ko ek katore mein len aur aavashyak namak, kasa hua adarak, hara / laal mirch, kuchal kaalee mirch, aasaaphetida aur kata hua karee pattiyon ko joden.

vaikalpik: yadi aap chaahen to vaikalpik saamagree mein bhee jod sakate hain. ballebaaj achchhee tarah se milaen.

vaada banaane mein mahatvapoorn pahaloo ballebaaj ka pees raha hai. beech mein boondon mein paanee joda jaana chaahie. yadi ballebaaj paanee bhara ho jaata hai, to sahee sthirata praapt karane ke lie ballebaaj ko chaaval ka aata joden.
peesane ke turant baad vaada ko tala hua jaana chaahie, kyonki lambe samay tak ise baahar rakhane ke parinaamasvaroop ballebaaj kee kinvan ho jaegee aur ise paanee mein daal diya jaega.
