Vangi Bath

vangee baath (baingan chaaval / kathrikee saadham) ek saamaany karnaatak pakavaan hai jo baingan ke saath banaaya jaata hai aur masaalon ka achchha mishran hota hai. pakavaan ek lanchaboks ke lie banaaya jaana aasaan hai aur paartee ke lie bhee paryaapt suruchipoorn hai. yahaan nuskha aata hai.

saamagree i
chaaval (main baasamatee chaaval pasand karata hoon) - 2 kap
baingan - 2 bade baingan / 4 madhyam / 6 chhote (bade hisse mein katautee)
pyaaj (vaikalpik) - 1 bada (baareek kata hua)
tamaatar - 1 / khatta dahee - 1/4 kap
haree mirch - 2
poore garam masaala - 1 teebeeelesapee (1 chhadee daalacheenee, 3 laung, 1 sitaara eneej, 2 kaardoman, 1 be pattee)
tel (adhimaanatah til ka tel) / ghee - 2 teebeeelesapee
graund nats (vaikalpik) - 1 bada chammach (bhuna hua)
haldee paudar- 1/2 chhota chammach
namak svaadanusaar
dhaniya patte (chilantro) - 2 tblsp (baareek kata hua)
asaaifoaitid - ek chutakee

dhaniya beej - 1 teebeeelesapee.
chana daal - 1 teebeeelesapee
urad daal - 1 teebeeelesapee
kus kus - ½ chhota chammach
til ke beej - 1 teebeeelesapee
paippairchons - 1 chammach
sookhee laal mirch - 2 ya 3
karee patte - 1 straind
kopara ya naariyal (grataid) - 2 tblsp

tareeka

  1. ek pain mein thoda tel garam karen aur sabhee masaalon ko avayav ii ke neeche bhunaen jab tak ki ve sunahara bhoora na ho jaen.
  2. ise thanda hone den aur phir ise ek mote paudar (vaangibaath paudar) mein pees len aur alag rakhen.
  3. chaaval ko 10-15 minat tak bhigo den, ise aavashyak namak ke saath alag se pakaen aur alag rakhen.
  4. ek gahare pain mein heet tel / ghee, poore garam masaala aur moongaphalee joden. pyaaj aur haree mirch ko tab tak saumpa jab tak ki yah sunahara bhoora na ho jae.
  5. agala tamaatar / khatta kaddoo joden aur ise sautai.
  6. baingan ke tukade, haldee, asaaifoaitid aur thoda namak joden.
  7. isamen vaangibath masaala paudar joden, kavar karen aur ise tab tak pakaen jab tak ki baingan (baingan) achchhee tarah se pakaaya jaata hai.
  8. pake hue chaaval ko isamen milaen aur achchhee tarah milaen taaki chaaval achchhee tarah se masaala ke saath lepit ho.
    (vaikalpik roop se, yadi aapane chaaval pakaaya nahin hai, to chaaval ke saath is masaala ko joden aur ise pakaen.)
  9. baareek kata hua chilantro ke saath vaangee snaan gaarnish. paapad aur raayata ke saath parosen.

tips
- atirikt svaad ke lie ant mein neemboo ke ras ka ek teebeeelesapee joda ja sakata hai.
- aap ise ameer banaane ke lie chaaval ko naariyal ke doodh se paka sakate hain.
- aap thok mein vaangibaath paudar bana sakate hain aur ise kaee dinon tak stor kar sakate hain.
