Hi guys, I was using up what I had in the fridge and decided to throw together a healthy salad for lunch tomorrow. With my trip to Japan coming up I'm doing my best to bring lunch to work instead of spending twice the money on bought lunch.
Let's get started
Knife
80-100g of Spinach ( 3-4oz)
3 tomatoes
1 yellow or orange bell pepper ( the sweetest colors)
100g Cheddar Cheese/Mozarella
50g Salted Peanuts (approx 2 oz)
Cut the spinach as finely as you like, usually half or quarter the original leaf size is fine.
Chop tomatoes into 1/8ths and cut the peppers into thin strips.
Measure Peanuts and cheese
Choose a dressing 1.5 table spoons should suffice. Or to make a dressing, drizzle of olive oil, and juice of half a lemon would be tasty too.
Put all ingredients into a lunch box, close on the lid and shake. Then you are done
