Chicken Cacciatore

Here's a great recipe for Chicken Cacciatore by my favorite You Tube Chef CookinginRussia.
He is a real restaurant chef and he teaches you how a restaurant chef would make the dish.
I love cooking and he learned me a lot.

So here we go , what do you need?

6 Chicken Thighs, LARGE & bone-in (just under 2 pounds)
120 g (4 oz) Mushrooms, ideally Porcini
2 T. Butter + 30 ml (1 oz) Cognac if button mushrooms used)
100 g (3 1/2 oz) Tomato Sauce, Italian boxed
120 g (4 oz) Onion, diced medium
100 g (3 1/2 oz) Celery Root, cut in strips (Celeriac)
100 g (3 1/2 oz) Red Bell Pepper, cubed
100 g (3 1/2 oz) Carrot, diced medium
60 g (2 oz) Fennel, diced medium
100 g (3 1/2 oz) Tomato, diced (fresh in season, else canned)
8 Garlic cloves, whole
1 1/2 t. Black Peppercorns, freshly cracked
Dried Rosemary, Oregano, and Basil
350 ml (1 1/2 C) Red Wine - ideally Barolo
1 Chili Pepper, minced. Ideally Hungarian Yellow, but Fresno is okay
2 t. Sugar
1 T. Parsley, minced fresh
Salt
