Arepas are food we combine with everything. From pickles, sausages, meats, stews, salads and all the above mentioned mixed, this kind of pre-cooked corn bread is a very versatile element in the diet. I am a lover of green and this time I found fresh watercress in the market so I prepared a tuna and watercress salad to accompany my breakfast arepas.
First I cut the watercress into pieces. I added chopped bell pepper and grated carrot. I mixed it with tuna and added salt, oil, and lemon. Lemon acid helps eliminate the bitter taste that watercress can sometimes have. Then, I mixed everything well and voila! Arepas stuffed with a fresh watercress and tuna salad.
