Ingredients:
Beef:
- 1 Tbsp olive oil
- 1/2 yellow onion, sliced
- 2 pounds ground beef
- 1/2 Tsp chili powder
- 1/2 teaspoon cumin
- 1/2 Tsp paprika
- 1/2 Tsp salt
- 1/2 Tsp ground black pepper
- 1/4 Tsp crushed red pepper
Filling:
- 20 fajita-sized tortillas
- 18 taco shells
- 1 pound Cheddar cheese, grated
- 15 Roma tomatoes
- 1 green leaf lettuce, sliced
Directions:
- Pre-heat the oven to 325 f
- Beef: In a skillet over medium-high heat, add all olive oil and onions. Cook until beginning to soften, then add ground beef. Cook the meat until it is totally golden , then remove the fat. Add the chili powder, cumin, paprika, salt, black pepper and red pepper and stir. Add water and stir. bring down the heat.
- For the fixins: wrap the round tortillas in foil and warm in the oven for 25 minutes. Before serving, dont forget to crisp the taco shells in the oven according to package instructions.
- Serve with cheese tomatoes and lettuce
