Today's Sustainable Stew & Polenta Feast in the Garden of Eden

It is another glorious day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.



Today we made a hearty & wholesome feast with beef stew, polenta, sweet potatoes, and garden fresh salad.

The feast started with a salad cheers to our health! 



We love veggies, especially raw, garden fresh veggies! We make a big salad every day to get plenty of raw, fresh veggies and all the healthful vitamins & minerals they contain into our diet.

Today's bright & colorful salad had a beautiful bed of greens topped with red tomatoes, white onion, carrots, yellow peppers, purple cabbage, cucumbers, mushrooms, cilantro, and sunflower seeds. 



Everyone here is free to eat as much or as little of anything as they like, and they can also customize any dish to fit their preferences! Some people like to add cheese to their salad while others don't; some like heavier dressings while others prefer lighter vinegar dressings. Some people like to add a bit of sweetness with dried or fresh fruits, while others prefer not to mix veggies & fruits at all. The options are endless, and it is very comforting to have options to be able to make something to one's exact tastes! 



While some of us are satisfied to make a substantial salad as our main meal, we also offer hot, cooked items for anyone who would like to have more food for dinner. These options are particularly nice as the weather gets colder and we burn more calories just to regulate our body temperature, as we don't have central heating in any of the structures on our property but still have lots of work to be done outside. 



We almost always have lots of mushrooms and onions on hand, and for many people here they are a favorite food! It is quite common for us to have a large bowl of sautéed mushrooms at our daily feast, and today was no exception.



The mushrooms paired especially nicely with a rich, thick beef stew! We lightly browned chunks of beef stew meet and added yummy veggies like onions, brussels sprouts, and tomatoes. We simmered it all together in a thick, gravy-style broth.



As another side, we prepared polenta from dried cornmeal and added herbs, dried tomatoes, red pepper, and broth for extra flavor. The polenta made a nice, hot, creamy, carbalicious base for the stew! Some of our vegetarians enjoyed it with a sprinkle of cheese and cracked black pepper. 



And since it's sweet potato season and we love them, we made a bunch of steamed sweet potatoes too! These have tons of beta carotene, potassium, fiber, copper, manganese, and vitamins C and some Bs. They're also super delicious and are another dish that can be customized in a number of ways! Butter and salt are classic toppings, but today some of us went a little more festive with cranberry sauce and feta cheese crumbles. 



We steamed the sweet potatoes in a big pot on the rocket stove, and made super efficient use of the fire by adding another pot of water for tea on top of it!



Today's feast was beautiful, substantial, generous, and filling. This epic food reality is an absolute blessing that we give thanks for every single day, and we are honored to share our abundance!

Every time I read one of your posts, my mouth begins to water. I keep reading more and more about your community and am filled with a desire to just come help out sometime, if for nothing else than the food.
