Lentils are one of the world's healthiest foods, and they are a classic dish from our sustainable outdoor kitchen!

We have a very unique relationship with food; you can read about it in our previous post. We love to share as much as possible, which sometimes means making huge pots of delicious foods that can stretch and stretch and stretch!

Lentils are high in protein, iron, B vitamins, and fiber and low in fat; they are very wholesome and filling, thus a large pot goes a long way even for a crowd! This food formula uses coconut milk and water to cook the lentils in, adding not only flavor but incredible health properties. Coconut is a natural antimicrobial and a great source of the healthy fat your body needs.

Coconut Curry Dal Lentils are great over rice with a nice vegetable dish to round out the meal. Hot, hearty, tasty bowls of thick, rich lentils are ideal to serve as the weather turns colder! Not only is it a fulfilling meal, but they provide nutrients to keep your body healthy and strong, which is supremely valuable as seasonal diseases like cold, flu, and depression accompany the shifting seasons.

Wow, this looks and sounds delicious. I do a simple lentil dal recipe with lots of spices, especially turmeric, and it's really good. But, I think adding coconut milk to it, like you do here, will make it even better. I'm going to try it.

Coconut is great in dal! It gives it a slight sweetness and adds a lot of nutritional value. Turmeric is a great spice, and it's got incredible medicinal properties as well! It's a strong antimicrobial and anti-inflammatory. We use it frequently.

I tried a channa masala recipe today and remembered your use of coconut milk in this dal recipe, so I added it to the channa masala. It was delicious! I served it over steamed red quinoa. Thanks for the tip.
