Ridiculously Easy Cookie Edition
As a spectacularly busy mother, I am often waylaid with a "what the heck do I even bring to this bleepin function" moments. I like to call them Popup Events, for they always seem to spring themselves on us in a most grandiosely random fashion. I'm talking about the times when you need a snack for a 4-H meeting and didn't know about it until last minute, or when your homeschooling neighbor texts and says, "Hey! we can get lift tickets to Lookout Pass if we donate 4 cans of food per person!"
Being somewhat of a Frugal Fran, I love it when the local establishments run special deals that make it practical for families to partake in some fun. Skiing and snowboarding are expensive, especially in my neighbor's case, as she has four boys! Lift tickets for kids are $33 a pop! YIKES! So tomorrow, a very thankful group of homeschoolers are going to ascend Lookout Pass for some hillside shredding fun, and we don't have to hike back up the hillside for another run, we can ride in a CHAIR! AHHH!
Sorry, I get excited easily about conveniences. Anyway, back to the snack thing. We are all packing lunches to feed our snow patrol horde with, and this particular snow board lunch in need instance called for one of my favorite quick, fast, and in a hurry dessert recipes: Cake Mix Cookies.
I think I have extolled the virtues of my favorite in a hurry cookie recipe before, sometime last year, but this particular variation deserved a shout out. Before I get to the how to, I must throw out a couple of disclaimers:
Unpleasantness dispatched, let's get to the good attributes of this cookie recipe. From start to finish, I can have 3 dozen cookies prepped, baked, and cooling on my counter in about 30 minutes. That's how awesome this recipe is! Cake mix cookies are not anywhere near amazing as the one's @gringalicious always lets me nibble on every time we meet, (Sigh. I love her baked goods.....dang it! Now I need a brownie!) but they are always inhaled and receive glowing reviews every time I make them, so there's that.
The above picture includes everything needed to make cake mix cookies. A box of store bought cake mix, 2 eggs, and 1/2 cup vegetable oil is all it takes folks! I had some Macadamia nuts languishing in the snack cupboard, and they just begged to be added into this batch of cookies, along with some milk chocolate chips.
Into my LimeAid mixer went the white cake mix, eggs, and oil. I make sure that I mix everything until well blended and then I add any additions that I desire. Well, any additions that happen to be in my cupboard. It's okay to get creative here, one time I added chopped up peppermint candies and mint extract to a chocolate cake mix and it was DELISH!
I then scooped out tablespoons of my never fail cookie dough onto my restaurant sized cookie sheet and popped the future cookies into a 350 degree Fahrenheit oven for 11-12 minutes. Don't over bake these little gems, you want them lightly browned on the edges.
Even if baking is not your thing, these cookies are so simple and inexpensive to make. I've never had a batch go foul on me, and the flavor combinations are endless!
Cake Mix Cookies
1 box cake mix (any flavor your desire, for this batch I used white cake mix)
2 large eggs
1/2 cup vegetable oil
Add ins! I used 1 cup chopped macadamia nuts and about 1 1/2 cups milk chocolate chips in this batch)Mix cake mix, eggs, and oil in a mixing bowl until well combined.
Add in your add ins, whatever you desire!
Place rounded tablespoons of dough onto an ungreased baking sheet and bake in a 350 degree oven for 11-12 minutes.
Cool and devour!
LOL at the part where you said there’s nothing good about them health wise 😂😂 but anything that’s that good can never be healthy unfortunately:( I always drop by friends houses and they always bake for me and I don’t know how to make anything . This looks super easy as well

Ha ha! You are so right about things that are so good they are probably bad, but I think the occasional indulgence is more than cool:o)!
It sounds like you have a crop of excellent friends, I'm one of those that is always baking things for others too, there is just something so wonderful about sharing food with friends, especially culinary challenged ones😆

I would gladly place a plate of cookies in your general vicinity😊
After a snowstorm while I was gone last weekend, it was actually a bit balmy today, and by balmy I mean about 38 degrees and the sun was out, lol! Hopefully you are more Spring than freeze today!

Oh those look SO good! My mom brought me some cookies a couple days ago that look just like yours. Is the cake mix the secret to getting chewy cookies? They make cookie mix in a bag but those always wind up flat and crunchy, which does not pass as a cookie in my book!

Cake mix cookies always turn out chewy for me, as long as I don't overbake them. I tend to take them out of the oven after about 11 minutes because I adore chewy cookies.
Confession time: I have never made a cookie from a cookie mix before, but I have had them at my Grandma's house and you are so right about the flat crunchy part. I hope give cake mix cookies a try, they are pretty good!
Hope you are having a great night!:)

Ahh, a fellow macadamia nut aficionado! They are so glorious, I might have ate a few that were destined for the cookies...
It sounds like you do a fair amount of baking yourself, that is awesome! I hear ya on the cookie evaporating problem, I have to hide any if I want to partake of them, for they just disappear here too. Thank you so much for your awesome comment!

No problem @generikat.Love your sense of humour combined with your take upon food.😂.There is evaporating slowly, but mine is called vanishing without a trace.😂Oh and my cookies have got the added secret ingredients from my kids( which yours will not contain thankfully).Only bit of bogie, sweat and tears.lol mmmm delish.Cant wait to try your recipe.Next time you make yours if you have a spare packet of m&ms crush them and add them to your mix. They come out amazing!👌

You know, I am kind of thinking about putting a pack of M&M's in my chore jacket pocket, and by the end of a couple of days they would be properly crushed for cookies, cause that suggestion sounds amazing! So going to try that.
Your family DNA cookies sound intriguing as well, lol! Nothing adds flavor to a baked good like a good old-fashioned Whatcha Cooking Toddler Sneeze into the mixing bowl. I gotta say @pamcooks, I do so love your sense of humor, I have a feeling some of our mutual commentary is going to become legend!

It soooo is generikat. Honestly reading your posts felt like I had written them myself.😂Oh yeh the DNA Biscuit.Good old test for my immune system. If nothing happens to me I am in awe how strong my gut is! Just call me Supergirl.Really good idea with crushing them m&ms.Well dont call the PC parent brigade.I give the packet to my one year old.He cant get into the packet but he will crush them with his gums and by the time I get them back hey presto ready for baking. So yes he may have had a packet of m&ms but didn't get to eat them.Cruel to be kind parenting there.lol.But do try the cookies! 👍🏼👌❤

Maybe not healthy but certainly tasty. Love macadamia nuts. I might even add some white chocolate to these beauties:)

Ooh! I love white chocolate chips with macadamia nuts, and it's funny you mention it, the only reason I used milk chocolate chips was because I used a white cake mix. If I had used a chocolate cake mix I totally would have thrown in the white chocolate instead. Guess I was in a contrast mood, lol! Thank you so much for your awesome comment!

Very clever.
Aimee is a bit gluten intolerant so I don't know if a gluten free cake mix would work as well for this or not. Worth a try maybe. That or I can use this when we need to bring treats somewhere for others. Thanks!

Ooh! I am so curious to see if a GF cake mix would work as well as a standard mix! I might even give it a try out of curiosity. I feel for Aimee, gluten intolerance is harsh. My aunt has the celiac plague, so when we were kids there were all manner of cake experiments, rice flour makes the best Mississippi mud cakes, lol!
