Cozy rainy day

This photo is from a few years ago when I was running a Whole Foods Butcher department. The photo was from Thanksgiving and we were challenged to come up with something creative and I had never seen a crown roast made from two whole beef ribs.

For those of you who don’t know why that’s an impressive concept or more or less understand the dimensions of the pieces involved, I’ll excplain!

Each whole beef rib from each side, contains 7 ribs, each weighing anywhere between 1-1.5kgs as a single roast, in most cases. So after cleaning up some of the fat off the bones you are left tying two ~9kg pieces together into a wheel!

After a visit from my Regional President around the holidays she was impressed (even as a vegetarian) and wanted to have every other store do this in the upcoming Christmas holiday. Which was a nice little confidence boost as a new manager in the company to have the Regional President, who took this picture by the way, give you props. As a slow paced lifestyle Canadian working in a big New York store... I’ll take it.

That was my favorite part of that place, I really miss it lately. Making big fun displays creates a more fun dynamic!
