Personally I like beets...my family isn't a big fan, but I cook them well enough that they eat them. Here I cooked beets after making them look like noodles. I just throw some coconut oil into a pan and add the beets. To get rid of the root taste, I add coconut vinegar or balsamic vinegar to give it a nice acid that is pleasant. Lemon juice works well too. I am also a salt lover...I know, I know...but I use sea salt which is better than regular table salt. I then usually make some potatoes or rice along with a protein of choice.
