Chicken, sweet potatoes, and green beans

Crockpots can be wonderful! I buy a whole organic chicken and place it in the crockpot with some spices that I enjoy like garlic, a Sonoma pepper blend, and salt. Cook on low for 8 hrs. Great if you are working.... it will be done when you get home. Now once you are ready for dinner, place sweet potatoes cubed and peeled in a pot and let them cook. Once they are tender add some coconut milk or almond milk to the potatoes just enough to make a mash. I also add some buttery flavored nutiva coconut oil. Mash it up and add some salt and pepper. Now open up some frozen green beans or fresh and cook them the way you like...I use frozen and just put them in a pot and heat them with salt and pepper. Now plate it up with some avocado. Perfect meal!
