Stir-Fried Edamame Sweet Potato Noodles || Recipe

I went for groceries with my friend the other day, and saw this Sweet Potato Vermicelli. To be honest this is the first time I saw it in the store, and my friend told me that she has been tried it and it was really good.

So, I pick one for myself to try. Cook it as dinner, and yeah turns out really good and I love it. Not my hubby tho! pufffttt...he’s so picky about what he eats.
He said he still prefer the Indomie goreng.

However, This recipe, I was inspired by online recipe but with a few changes to make it my own.

Firstly, I started with getting ready all the slicing, pilling and chopping the ingredients, chicken, carrot, onion, green onion, garlic, and edamame.

Boil the edamame for about 3 minutes, and peel the skin off.

You’ll need to boil the noodle in a boiling water for about 6 minutes. And to prevent sticking pour about 1 or 2 tbsp of olive oil then stirring. Otherwise, pour some cold water into the cooked noodles.

Well, well...as everyone know cooking starts with sauté the onion and garlic. I’m not sure about all of you, but I always add in the onion before the garlic, like...as the garlic would get cooked faster then onion, I guess.
So, I always fry the onion for about a minute maybe...or so,
Then I’ll add in the garlic when the onion is half cooked or soft.
I don’t know, this is just the way I cook, Lol.

So, if any of you happen to live near Asian grocery store, you’ll probably easier to find these Sweet Potato Vermicelli and so Edamame.
And I’m sure there are bunches of online recipe you and easily find in the internet.


Stir Fried Edamame Sweet Potato Noodles.

INGREDIENTS

  • 200 g sweet Potato Vermicelli
  • 1 onion
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp sesame oil
  • 2 tsp chili power
  • 1 tsp ground pepper
  • 1 tbsp soya sauce
  • 1 tbsp sweet soya sauce
  • 2 chicken breast

Instructions

  • Bring about 4 quarters water to boil.
  • Get ready all the ingredients, chicken, carrot, onion, garlic, and green onion.
  • When the water is boil, add the edamame and boil for about 3 minutes.
  • Next, in a bigger pot, also bring some water to boil. When it’s boiling, add the dry sweet potato noodle and cook for 6 minutes.
  • Drain the noodle, and pour in a big bowl and add olive oil and stir to cover all over to prevent sticking.
  • In a large sauté pan, add 2 tbsp of sesame oil and heat over medium heat. Add the onion and garlic.
  • When the flavours of garlic and onion comes out, add in the chicken, soya sauce, sweet soya sauce, chili powder and ground pepper. Stir.
  • Add in the veggies, carrot and edamame.
  • Last, add the noodles and stir well.
  • Serve it while it’s warm.
