Please tell me you’re week needs some delicious comfort right about now because, if so, this is exactly what you need!

How do you feel about chili? To me it always seems like chili is one of those meals that doesn’t get appreciated enough. I don’t get it, it’s so homey and full of flavors, oh, and you can load it with so many good things like cheese, sour cream, and big fat chunks of cornbread, YUM!. Plus, it’s versatile and you can do so many things with it (Hello chili-cheese fries!), what’s not to love?

I have to tell you, even within my own family chili isn’t the most popular. I mean, everyone will eat it but it isn’t a favorite by any measure and it’s never a first choice. I find it surprising too, because usually everyone really enjoys it once it’s made and wonders why we don’t have it more often. But then when it’s gone they quickly forget how good it is and it plunges down on the popularity list until the next time I feel like reviving it and convincing them how great it is.

A few days ago I realized how long it had been since my last cozy warm soup or chili recipe, way too long I’d say. That’s why I started brainstorming for what type I should make, and with it being October, I felt like doing something fun and festive would be a good idea. It just so happened that I had finally gotten around to roasting a pumpkin on the same day.

I honestly used to be really grossed out by the idea of eating the flesh of a pumpkin. Mostly I think it was because of all the years my mom and dad would carve pumpkins with us as kids. Oh my goodness, those are really fun memories. I’ll never forget the first time my dad asked me to help clean one of them out, you know, because you have to stick your hands into the stringy, seed-filled center in order to do it. I loved helping even though how the smell was so squashy and the feeling of it on my hands made me want to gag a little bit. Yeah, so that’s why I never considered actually eating them. In my mind they were simply organic mediums for seasonal art.

So this variation of chili just might be my new favorite. In the past I’ve made it with Mexican flair, or tried different beans and meat combinations, or tested multiple levels of spiciness. Like I said, it’s so versatile. This one though, it’s just so full of nostalgic tastes of autumn that I can’t see ever beating it. And if you happened to browse the ingredient list yet, then yes, I did put apples in it. You’re going to have to trust me on this one guys, it’s so good! It won unanimous votes of being better than my classic chili recipe so I was pretty happy about that.

This would be a great tailgate party meal and, if you’re as into leftovers as we are, you should know it actually gets better next day! One more thing, don’t forget to serve it with all the good toppings you like. I added pumpkin seeds (or pepitas) this time to complete the whole picture and because I’m having a moment with them right now. Yeah, you can’t skip the pepitas!

What a nice meal to see on the first of October, after a cool and rainy night! I am so ready for autumn and the coolness and the rain. Your chili fits right in with that! Nice cooking in including that apple, too. It's a secret ingredient in some good soups! I like your idea of putting pumpkin in your chili. You could make a different kind of chili every couple of weeks all through the winter and I bet your family wouldn't get tired of it - chili is so flexible. Enjoy the fall - and all the fall cooking you will be able to do in season now that you are in Idaho!

I am so enjoying the fall so far. I've missed a true fall, or one that I remember from my childhood. When you walk out the door, you can just smell it and I love that so much.

Yes, many varieties of chili are coming for sure, but even way more are many pumpkin recipes. I have some really crazy ideas coming up.

I'd love to, but easier said than done from a hotel in SE Asia. I'm gonna keep watching your blog and when I get back to the states for a full week; I'll make one of your dishes for my folks and blog about it. Until then I'm hopping around these parts eating noodle soup and Green Curry! Tomorrow I fly from Luang Prabang Laos to Bangkok then take a bus and a ferry to the Island of Ko Samet. I plan to chill there for a week. Should be fun and relaxing. Will float around Thailand for two months then to Florida for a week then through South America. Como estas Idaho? This look very yummy. My family would love it, they love anything pumpkin and since it is starting to get a little cooler around our area the chili is a great comfort food. Love, love, love yellow cornbread on the side, we usually use crackers in our chili but might not with this version. Thanks for sharing another great recipe.

You've got to give cornbread a shot with chili, you'll thank me later. It adds a different texture than crackers. Of course, there are all types of recipes for cornbread. I tend to make mine a little spicy with jalepenos and just a tad sweet. My dad doesn't like a sweet, so that's why we say a tad. - LOL Have a great weekend!

Might try it but with mine and my son's OCD the texture thing gets both of us. I like my cornbread a little sweet and one of my sons, one daughter and another son like their foods spicy so I may make a batch for them with spice. My other son and other daughter do not care for spicy too much. Big families are great for trying out new recipes, I can always make different things and there's something for everyone. That's another great reason I love your recipes, I can usually find something new to try. I just made cornbread last night so all I have to do now is get your great chili going. Thanks, you have set our dinner plans for the night :)

A little thing that would definitely benefit this bowl full of loveliness and delicious seeds is this amazing idea I had a couple of days ago.
So I always soak my nuts these days, because of the digestive benefits of course. I decided to grab a couple handfulls of soaked wallnuts and bake them in the oven at 130 degrees for a while until crispy and then dish them into a skillet with a bit of caramelized sugar and when everything is nice and sticky, add some pink Himalaya salt.

That sounds very tasty, I think I will give it a try. This sounds epic for a pumpkin dish I have in mind. Thanks for the inspiration @erikdenoorman
