PREPARATION
STEP 1
Pour the cooled broth into a pot. Immerse the fish by making sure it is completely covered with liquid.
2ND STEP
Put the pot on the fire and bring the liquid to the point of shaking. Then start calculating the cooking time. Cover and let poach over very low heat until the fish becomes opaque, 8 to 10 min depending on the thickness of the net. Make sure to NEVER let it boil with large broths so as not to damage the pulpit.
STEP 3
Remove the fish from the water with a spoonful and serve on the hot plates, accompanied by mayonnaise sauce.
