How Good Does It Feel To Prep Your Meals?

It's always easier to make healthy choices when you have a fridge already stocked with healthy meals for the next few days.

I had the flu lately so my life has felt like one unorganised blur but I am feeling better and ready to get back on track so I took the opportunity to do some meal prep

I love baked chicken, with some sweet mash potato, and roasted broccoli and asparagus!

So easy to portion up and keep in the fridge until you need to re-heat and eat.

My husband and I are doing Tough Mudder in Sydney on November 18th so I need to seriously get on top of what I am eating and not have any more naughty treats like this little decadent delight I made the other day:

Recently, I discovered the chickpeas for myself. Now I'm embedding it in my recipes!)

I love cooking and always make meals from scratch.
One of my favourite is Pan fried Salmon (cooked in a dry pan) with roast sweet potato, griddled Asparagus mushrooms and a Hollandaise sauce for the Salmon.
I was in Sydney last year for Christmas. We were probably one of the few families that had a full English Christmas dinner on Christmas day :)

and yes I made a full English Christmas dinner last year as well (I'm English but living in Sydney cuz my husband is Australian) and it has to be done. our Christmas dinners are the best haha :)

We were visiting my daughter who is English and her partner is an Aussie.
Us English have to cling onto our heritage :)

Sadly I don't prep my meals. I'm too much of a fatty lol. I wish I did though.

haha, I feel you!!! I had never done a meal prep until a few months ago!!
But I'm so much of a (bad) foodie.... if I don't prep a meal I'll be tempted to have something naughty instead!

I like to bake quite a bit of chicken and either shred it for chicken tacos, chicken and broccoli casserole and for salad toppings or cube it for chicken salad, chicken a la King and Chinese fried rice. It's great for lunches and dinner during the week.

It's a wise choice to be honest and very helpful when you feel like eating and have other things to do than cook. That reminds me, I made sweet potato mash 2 weeks ago, it didn't taste as expected and I'm getting better ;)

That chocolately treat is not helping with my sugar cravings haha. Meal prepping is a great idea. I've only ever gotten as far as prepping ingredients for omelettes to use throughout the week.

I've just started getting into sweet potato but I've only roasted them whole or made sweet potato fries. For mashing them do you just boil them and add butter and a bit of milk? Any other spices at all?

I don't even add butter and milk to the sweet mashed potato. Usually I love to add butter, milk, cheese, salt and pepper when I mash regular potato. But for me when I do sweet potato it tastes fine just boiled and mashed without adding anything - and I guess thats healthier too. Try it and see what you think - you can always add a little something something in if you feel it needs it :)

Cinnamon or/and Chinese five spice is a great addition to sweet potato. Maybe a little chives and plain yoghurt if you wanna be decadent 🌸

I love cooking and I do it almost everyday! We eat lots of fresh veggies from our homestead and eggs from our chickens but our staples here in my home are pasta (ok not too healthy haha but I'm Italian what can I say?)and white meat.
Any vegetable tossed with a tiny amount of ghee, fresh garlic, finished with crushed pepper, coarse salt and lemon zest holds well and tastes even better! Perfect for meal prep dishes!

I'm going to start prepping again, I use to do this a lot but for all about it lol

My favourite weekday lunch is a salad : baby spinach, lentils (all the lentils), green beans, lightly steamed, baby tomatoes and sometimes feta cheese. It's da bomb.com!

I also like to make sweet potato fries and mash 💓🌸

I've just made a massive vat of veg chilli. Will put some in the fridge for Tuesday and the rest will be portioned up & popped in the freezer. Hope you fully recovered soon. 😷
