삼양주 담기 과정은 이렇습니다.

  1. 밑술
  2. 2차 밑술=1차 덧술
  3. 덧술=2차 덧술

1. 밑술

재료
멥쌀 800g
누룩 400g
생수 2.5L

만들기

  1. 멥쌀을 맑은 물이 나올때까지 씻어 3시간 불리고, 1시간 물뺀 후 가루 낸다.
  2. 생수를 팔팔 끓여 1에 조금씩 나누어 부어 범벅을 만든다.
  3. 2를 25도까지 식혀 누룩을 넣어 고루 섞어둔다.
  4. 36-48시간 후 2차 밑술을 한다.
