Hello, dear Steemians. How are you? Have you ever had spicy chicken empanadas? I'll show you how to make it at home today.
Spicy chicken empanadas are very easy to prepare, and it's very healthy and have protein and are slow in fat and less carbs than fried empanadas. By making it at home you won't have all the extra chemicals that go into industrially manufactured empanadas. Its ingredients are easy to get and you will surely have them at home. Let's go to the recipe!
Ingredients:
Vegetable broth 1 liter or 33.81 us fl oz
Chicken 1/2
Red pepper 1/2
Onion 1
Green onion 1
Cumin to taste
Ground chili pepper to taste
Paprika to taste
Olive oil
Tomato 1
Olive 1 handful
Eggs 2
Himalayan or sea salt
Fry:
Sunflower oil quantity required
Mass:
Empanada discs 2 dozen
Sauce:
Tomato
Mint or mint 1 handful
Locoto or chili pepper 1/2
First boil the chicken in the vegetable stock for one hour. Peel the chicken and store it in the refrigerator.
Cook the onion cut into julienne strips until lightened together with the white part of the green onion in olive oil (white part) in olive and add the previously cooked and shredded chicken.
Add cumin, chili and paprika to taste. Add the tomatoes cut in cubes, add a little broth, salt and integrate cooking.
Cook for a few more minutes, let it cool down and put it away in the fridge.
Add to the cold stuffing the chopped olives, the raw part of the green onion (the green part that we didn't use before) and the boiled egg in its shell, peel it and chop it.
Assemble the empanadas and cook in the oven at medium heat for 15-20 minutes.
For the sauce that accompanies, peel and grate the tomatoes and add the chopped mint and finely chopped chili and Himalayan salt or sea salt.

Las empanadas de pollo picantes son muy fáciles de preparar, y son muy saludables y tienen proteínas y son bajas en grasa y tienen menos carbohidratos que las empanadas fritas. Al hacerlas en casa no tendrán todos los químicos extra que se usan en las empanadas fabricadas industrialmente. Sus ingredientes son fáciles de conseguir y seguramente las tendrás en casa. Vamos a la receta!
Ingredientes
Caldo de verdura 1 litro o 33.81 us fl oz
Pollo 1/2
Morrón rojo 1/2
Cebolla 1
Cebolla de verdeo 1
Comino a gusto
Ají molido a gusto
Pimentón a gusto
Aceite de oliva
Tomate 1
Aceituna 1 puñado
Huevos 2
Sal del Himalaya o de mar
Fritura:
Aceite de girasol cantidad necesaria
Masa:
Discos de empanada 2 docenas
Salsa:
Tomates 2
Menta o hierbabuena 1 puñado
Locoto o pimiento de chile 1/2
Primero hervir el pollo en el caldo de verdura durante una hora. Despeluchar el pollo y guardarlo en la heladera.
Cocinar la cebolla cortada en juliana hasta clarear junto a la parte blanca de la cebolla de verdeo en aceite de oliva (parte blanca) en oliva y agregar el pollo previamente cocido y deshilachado.
Agregarle a gusto el comino, ají molido y pimentón. Agregar los tomates cortados en cubos, sumar un poco de caldo, salar e integrar cocinando.
Cocinar unos minutos más hirviendo, dejar enfriar y reservar en la heladera.
Agregar al relleno frio las aceitunas cortadas, la parte cruda de la cebolla de verdeo (su parte verde que no usamos antes) y huevo cocido en su cascara, pelarlo y picarlo.
Armar las empanadas y cocinar en el horno a fuego medio por 15-20 minutos.
Para la salsa que acompaña, pelar los tomates y rallarlos y agregar la menta picada y el ají picado finamente y sal del Himalaya o sal de mar.

I am buying slowly better equipment for my kitchen and take real pics of my recipes. This is one I´ve cooked in my youth and after when I was a law school student. We didn't have money to buy ready-made food but we liked to eat tasty food so we cooked 1-2 times a week for the rest of the days. In those days I was also a private teacher of first year subjects in law school and then a teaching assistant in three subjects at my university law school. This is a hobby for me and I enjoy it.
