As winters are coming around , its highly impossible to get out of that blanket every morning. And on a cold winter day, when at home and wanted to have something delicious yet healthy, and is easy to cook . Well, then Lemon and Coriander soup is what you want. Fully enriched with Vitamin C . All the ingredients like lemon, coriander, carrots and cabbage helps in boosting the vitamin C to next level. And plus it is helpful in relieving cough and cold. So lets begin.
Lemon And Coriander Soup.
Ingredients:
Oil - 1tbsp
Lemon juice - 1tbsp
Coriander chopped -1/4th cup
Garlic chopped - 2-3 cloves
onions ( finely chopped ) - 1/4 cup
Green chillies - 2 tsp
cabbage ( finely chopped ) - 1/4 cup
Carrots ( finely chopped ) - 1/4 cup
Vegetable stock/ water - 3-4 cups
Cornflour - 2 tsp dissolved in water
and salt to taste.
Method :
Heat oil in a pan. Add garlic, green chillies and saute. Add the onions and cook for a while.
Add the cabbage and carrots cook on a medium flame for about a minute.
Add the vegetable stock and lemon juice bring it to boil. Add salt.
Now put the dissolved cornflour to the soup, stir continously. Cook on medium flame for about 3- 4 minutes
Add coriander, mix well and serve hot.
