Palapa or Uyap

The Palapa (on the left) is a staple in Maranao cuisine which is mainly made of finely chopped and pounded native scallions or in visayan "sibujing" mixed with garlic, ginger and lots of chiles. There are actually many ways in cooking the Palapa according to your taste, some would add coconut, "kuning" - a Maranao food coloring or chicken meat.

The Uyap (on the right side) or the Bagoong in tagalog is the most common Filipino favorite appetizer. It is made of either fermented fish or alamang - a very small type of shrimps or "krill" - mixed with salt and chiles. Some would also add sugar for a sweet spicy taste.

Both spicy side dishes goes with any food and be sure to prepare lots of rice because it will surely ruin your diet!
