Red Lentil soup is a hearty and delicious Turkish soup made with red lentils, tomato paste and Turkish spices.
When I make this soup, I always remember the story behind it's tradition. It’s quick to make, cheap, and filling. I'm vegan until 2015 and make vegan version almost every kind of turkish food. For this version, I’m following classic Turkish preparation and seasonings: onion, red pepper mint, and black pepper.
Unlike green or brown lentils, red lentils break down very easily when cooked and transform into a creamy texture when blended. This soup can be made as smooth as you like; just keep blending for instead, granulated, blend briefly for more texture.
INGREDIENTS
1 or 2 Tablespoons vegetable oil my advice sunflower oil
1 medium or large carrot, diced
1 tablespoon tomato paste
1 liter water first cooked and add 0.5 or 1 liter again how do you like
1.5 glass of red lentils
½ teaspoon mint
¼ teaspoon black pepper
¼ teaspoon turkish red pepper
¼ teaspoon sea salt
INSTRUCTIONS FOR MEAL
Added your lentils for any tool, rinse out them few times, drain, and the rest.
In a large pot over medium-high heat, saute the vegetable oil and the onion with a pinch of salt for 2 minutes. Add the carrots and saute for another few minutes.
Add the tomato paste and mixing it around for around half minute. Instantly add the lentils, water, broth, and salt. Bring the soup to a boil. Now add the mint, thyme, black pepper, and red pepper and saute for few seconds to bloom the spices.
After this it has come to a boil, reduce heat to poor or medium and cook for 15-20 minutes or until the lentils have fallen apart and the carrots are entirely cooked.
Then soup has cooked and the lentils are tender, blend the soup either in a blender or simply use a hand blender to reach the consistency you desire. You can add 0.5 or 1 liter water and blend few seconds. It is good to be granularTaste for seasoning and add more salt if necessary.
Serve the soup with a quarterly lemon, and extra mint. And you can add some pepper how do you like.
