I feel like 70% of the population will complain because of the pink meat and red juices. Many restaurants I've visited in the last 2 years will make the prime rib "medium" just to lower the amount of complaints.

People are very intolerant these days, and uneducated. This is why slow cooked and rare prime rib will slowly die from restaurants everywhere. I've been seeing it happen all the time.
