Happy Sunday friends!
Today I'd like to share a super easy and delicious salad with you! Most people think salads are boring and you never get full eating only a salad. But this couldn't be farther from the truth. By adding legumes, grains and starchy vegetables you can make a super delicious and filling salad. Like this arugula chickpea salad!

Ingredients
- 250 g arugula salad
- 2 rods of spring onion
- 250 g cooked chickpeas
- 1/2 tsp salt
- 3 tsp smoked paprika powder
- 400 sweet potato
- 2 limes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
Instructions
- Put the cooked chickpeas on a baking tray, add salt and smoked paprika powder and mix well.
- Peel sweet potatoes, cut them into little cubes and add them on the baking tray.
- Bake for around 30 minutes at 180 °C - alternatively you can also steam the sweet potatoes for around 15 minutes.
- In the meantime, wash and cut small arugula and spring onion and add everything to a bowl.
- Add the limes juice and spices and mix well.
- Add the roasted chickpeas and bakes sweet potatoes and enjoy!

Thanks Lena. Will let you both know. My husband has a wonderful appetite for the healthy options, I'm very grateful he's not a typical Afrikaaner. There's an expression here which sums up a lot of men (although these days sadly women and children too. In English it translates "rice, meat, potatoes"). However he will often just eat a big salad for a meal, as long as there is plenty of avo, possibly humus and roast veg.
