Juicy carrot cake with curd cheese cream (photos + recipe)

Today I would like to show to make a refreshing and healthy cake.

Who says, carrot is just for rabbit? Mix it with nut and curd cheese.... You prepare one of the best cake in the world!

Ingredients :

• Carrot ........ 500g
• Sugar ........ 400g
• All-purpose flour .... 320g
• Chicken eggs ......... 4 pcs
• Sunflower oil ........ 250ml
• Baking powder ...... 2 teaspoon
• Sodium carbonate ... 2 teaspoon
• Salt ............... 1 teaspoon
• Cinnamon ........... 1 teaspoon
• Pinch of grated nutmeg
• Chopped nuts ....... 130g

Cream:

• Curd cheese ........ 450g
• Butter ............. 110g
• Sugar ............. 120g

Recipe with pictures:

Step 1.) Grate the carrots on a fine grater

Step 2.) Make a batter and add carrots and nuts

Step 3.) Pour the batter on the baking sheet. Bake it in a preheated oven set to 180C for 45 minutes

Step 4.) Prepare cream: mix butter with sugar and add curd cheese

Step 5.) Cut the chilled cake in half.

Step 6.) Spread the half the cream on the lower part of the cake

Step 7.) Spread the other half of the cream on the top part of the cake.

You can sprinkle the carrot cake with the almond chips
