Recipe #1 | Turkey Slices with Curried Cream Sauce

Ingredients:

  • 6 slices turkey breast meat, cut 1/2 inch thick (about 3/4 pound)
  • 2 tablespoons butter or margarine
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon curry powder
  • 1 cup chicken broth
  • 1/4 cup milk
  • 1 small banana, diced (1/2 cup)
  • 1/4 cup chopped pitted dates
  • 1/4 cup chopped cashews
  • 1/2 teaspoon finely shredded lemon peel
  • 3 cups hot cooked rice or bulgur

Process:

  • Wrap turkey slices in foil.
  • Place in a shallow baking pan.
  • Heat in a 350 degrees oven for 20 minutes.
  • Meanwhile, for sauce, in a medium saucepan melt butter or margarine.
  • Stir in flour and curry powder.
  • Add chicken broth and milk all at once.
  • Cook and stir till thickened and bubbly, then cook and stir 1 minute more.
  • Stir in banana, dates, cashews, and lemon peel.
  • Arrange turkey slices over rice or bulgur.
  • Serve some sauce atop turkey.
  • Pass remaining sauce.
    CAN SERVE 6 PEOPLE
