Hey folks,

Growing up in the middle east always ate this dish at any arab friend's house. Its Arabic style pilaf/ fried rice dish with meat, nuts and tomato.
Figured I give it a try so called up one of my friend back home who is a celebrated chef locally to compile me an easy recipe. It was really simple and very delicious so why not share the love !

Take a ride to the store to grab some of these precious powders 😉

Cumin (10 grams or two teaspoon)
Cardamom (5 grams or one teaspoon)
Cinnamon(5 grams or one teaspoon)
Clove(5 grams or one teaspoon)
Almonds (crushed)(10 grams or two teaspoon)
Raisin(5 grams or one teaspoon)
Ginger(5 grams or one teaspoon)
Garlic(5 grams or one teaspoon)
Saffron(2 grams or half teaspoon)
Salt pepper and sugar for taste

Also grab them fresh chicken bone or boneless about 2 pounds ( 1 kg)
And the nice white rice about 2 pounds
1 pound tomatoes fresh
100g/ half cup tomato paste
200 g onions
Amd cooking oil 200 ml

Get home and put some oriental music on and start making dreams come true

  1. Heat them and oil and stir the onions sliced up till golden brown
  2. Add meat and stir fry till light brown
  3. Add tomatoes and stir fry for two minutes then add them all the spices mixed and ground along with tomato paste and stir.
  4. Add 5 cups hot water and bring to boil. Reduce heat to low and cover and cook for 35 minutes
  5. Keep the rice soaked 30 mins prior. Drain and add rice to the cooking chicken. Allow to boil
  6. Don't stir and cover tightly and put in oven for 15 mins.
  7. Serve hot with grape wine 😉
