As the first week of the new year comes to a close, I am reflecting on the good things that happened this week! One of those good things was trying a new vegan recipe. One of my "musts" for 2017 and 2018 is to eat more green and less meat, hence trying new vegan recipes. Finding ingredients, trying new things, and cooking with my boyfriend is one of my greatest pleasures, so we add our own fun to it too. We turn up jazz music, dance in the kitchen, and add our own twists to the food based on how it tastes. The other night, we made Mac n Cheese, and unfortunately was so immersed in the process that I didn't take any pictures. Sad :(
We found the recipe on Tasty, from Buzzfeed.
For the "cheese"
2 yellow potatoes
1 medium carrot (we used 3 small ones)
1 medium onion
1/2 cup soaked cashews
garlic powder
onion powder
salt
nutritional yeast
Boil vegetables for 10 min, or until soft, throw into blender with seasonings, add to 16oz of macaroni! Sprinkle pepper on top, or paprika, or both!
Very easy! We added more seasonings than the recipe calls for because we couldn't taste anything except potatoes at first, so that's why there aren't exact measurements for the seasonings.
