I used to make fresh waffles for breakfast every Sunday. But lately, I have stopped making them because Jordan usually has his soccer games on Sundays, and he doesn't really like to eat sweets for breakfast, but something more filling, energizing, healthier and nutritional like eggs.
And slowly I forgot all about making waffles until my older son asked me to make waffles again and so I did they were so delicious.
I used organic flour this time around and it made quite the difference in the texture and overall taste of the waffles. I actually did not try it myself since it has been a month now since I stopped eating flour and wheat and will continue at least for 6 months ( trying to fix my thyroid ) but I could see a huge difference in the mixture while I was making it and the waffles also felt heavier, more filling and just better and the boys said they were very delicious.
WAFFLE INGREDIENTS
2 Eggs
2 cups of flour
1 teaspoon of cinnamon
1 3/4 cups of milk
1/2 Cups of olive oil
1 Spoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla
The first thing I did was beat 2 eggs really well with a hand mixer for about 10 minutes until the eggs were fluffy/ foamy. Then I added all the rest of the ingredients and mixed them all together.
I greased my waffle maker and warmed it up to the right temperature.
I poured 1 big scoop of the waffle mixture into the waffle maker, closed it, and cooked it for about 2 minutes one by one.
Now, it's time to put whatever you want on it. I usually don't like to make my waffles too sweet but more fruity, but my husband and my older son like it sweeter with some fruit and some syrop, and I also had some whipping cream which was just perfect for the waffles.
First I added some mixed berry jam and then put the mixed berries on top.
And finished it with some whipping cream.
I also make waffles with some sliced bananas topped with syrup, but our bananas were still a bit too green to eat.
I, on the other hand, made my own coconut flour waffle, since I love, love waffles so I had to try making my own gluten-free waffles for the first time. They also turned out delicious but I will share them some other time, so stay tuned.
