Ingredients
1 kg beef sliced into cubes,
2 tbsp. Soy Sauce
2 pcs bay leaf
4 tbsp atsuete oil (annatto oil)
¼ cup onion chopped
2 tsp minced garlic
¼ cup butter,
⅓ cup liver spread
¼ cup peanut butter
5 tbsp tomato paste
3 pcs bird’s eye chillies (sliced)
1-1/2 tsp ground pepper
1 cup potato (cube)
1 cup carrots (cube)
1 cup green beans (slice)
2 pcs red / green bell pepper,
½ cup grated cheese
Instructions
On a large pot, place 1 kg of beef with soy sauce and bay leaf. Cover with water and boil until tender. You can boil meat on low fire or use pressure cooker if you want to tenderize meat fast.
On a frying pan, put annatto (atsuete) oil, sauté onions and garlic on medium low heat. Add butter, liver spread, peanut butter, tomato paste, chillies and pepper. Cook for several minutes until toasty.
Add potatoes, carrots and green beans, stir and add 2 cups of beef broth (water use to boil/tenderized the beef) then cover the pan.
Add the beef, vienna sausage, cheese and bell pepper and let it simmer until vegetables are tender.
Taste and adjust seasoning if necessary.
Serve with hot steamed rice or buns.
