Philippines is sorrounded by the sea. It is have around 7,107 islands and islets and reach of Marine life. The best food by the Filipino is Seafoods especially local and foreign tourist. They go to the aunthentic and Filipino Native Restaurants to find their favorite seafoods like fish, seashells, squids, and specially crabs. There are many varieties of Crabs one of this as they called the visayan local as "ALIMANGO". It is known in English as Giant Mud Crab. they were found it in the muddy place of seashore or under the mangrove trees where there are muds. they are rounder body, thicker and roundy claws meatier, and easier to pick than other crabs.
Because i am a Chef in a Prestigious Restaurant here in Cebu, I have my Own version to cook of this Alimango Dish. it is Simple and easy to cook when you are in home..
My Own Version of Dish the" Spicy Crab with Roasted Peanuts".
I'll share you how to do this;
INGREDIENTS;
2pc. alimango or Mud crab
1cup vegetable oil
3tbsp. red wine
salt & pepper to taste
2pcs. kalamansi
The SAUCE;
2tbsp. vegetable oil
2cloves garlic crushed
1pc. onion cut into thin
1cup water
1/2 cup siriacha sauce
2pcs. chili finger crushed
5pcs chili labuyo crushed
2tbsp. red wine
1/2 cup Roasted peanuts crushed
3cloves garlic crushed and roasted
2tbsp. cornstarch
salt & pepper to taste
spring onion v-cut for garnish
PROCEDURE:
First, cut the mud crab into pieces and mix it red wine, salt & pepper, Squeeze also the calamansi
pre heat the pan and put the vegetable oil until its hot
If the oil is hot, Fry the mud crab until it's golden brown
if the crab is cooked you transfer it in a plate with tissue to remove the exist oil and then, you set aside
SAUCE
Pre heat the pan, then put the oil until its hot
sautee the garloc, onions until its brown put the red wine and then water wait until its boil.
When its boiling put the siriacha sauce, chili labuyo crushed, and chili finger, salt & pepper
after that, put the cornstarch until its thick.
If they are thick put the crab and then mix well.
After mixing, transfer it on a plate then put the crushed roasted peanuts and crushed roasted garlic on the top and garnish it with v cut spring onion and then serve.
It serves 5-7 persons.
It's Easy to cook this dish. you try it in your home! you love it!
