According to Wikipedia;

A frog is any member of a diverse and mostly carnivorous group of tailless, short-bodied amphibians which composes the order Anura. “Proto-frog” which is the oldest fossil was discovered in the early Triassic of Madagascar, however molecular clock dating suggests their origins can be traced back to the Permian, 265 years ago. The greatest concentration of species diversity can be found in the tropical rain forests although frogs are vastly distributed ranging from the subarctic to tropic regions. Approximately 4,800 species has been recorded which accounts for over 85% of extant amphibian species and are also one of the five most different vertebrate orders.

Over 20 species of edible frogs are consumed worldwide, however be careful in using wild frogs for cooking since there are many poisonous species of frogs available  in the world of which many of them are characterized as being very colorful and small. Interestingly, when in the wild, these frogs use their bright colors to warn predators to stay away from them. 

Furthermore, some of the frog species  includes the green frog (Rana Clamitans), the pickerel frog (Rana palustris) and leopard frog ( Rana pipiens) that are usually caught from the wild and sold to expensive restaurant as a luxury food. The largest native North American species often referred to as the "Giant Frog" or "Jumbo Frog," is the common bullfrog and can reach 8 inches in body length. Because of its large size, this particular specie 'the bullfrog" is the most preferred specie for frog farming. However, while frogs and bullfrogs are eaten worldwide, probably, the Pelophylax kl. esculentus is the best frog for eating. This "edible mud frog" is greenish in color and has brown spots and highly sorted in all of central Europe because of its tasty leg. More so, this specie of frogs feeds mainly on insects like spiders, flies etc.

The better-known delicacy of French and Chinese cuisine is the frog legs as they are the commonly eaten part of edible frogs and bullfrogs globally. The legs are also eaten in countries like Albania, Slovenia, the northwest Greece, the Kerala state of India, the Southern regions of the United States, the Alentejo region of Portugal, Spain, Vietnam, Thailand, Indonesia and northern Italy. However, in regions like Brazil, Mexico and the Caribbean, many frogs are still caught wild. It should be noted that frog legs in North America tends to be larger than those in Europe. The world largest exporter of frogs as of 2014 is Indonesia and they are also a huge consumer. The frog legs meat is tender with mild flavor which can be compared to chicken. Often fried and seasoned with a blend of spices which includes salt, onion powder, cayenne and garlic powder.

Frog dish is not only a culinary delicacy; this exotic dish is also a nutritional powerhouse.  At 16kg per serving, this lean meat is high in protein with only 0.3g of fat and a rich source of omega-3 fatty acids. More so, Frog meat is rich in Vitamin A, Vitamin B- 12, Sodium, Potassium, Dietary Fiber,  Sugar, Calcium , Magnesium, Vitamin D ,Iron , Thiamine, Riboflavin, Iron, Phosphorus, copper and Selenium. The texture and taste of the meat is mild more like a mix of fish and chicken and can be cooked in a variety of ways including stir fried, steamed or stewed.

This dish looks amazing! If I looked quickly I mistook it for quail to be honest as the bones are sort of similar but definitely recognise frogs legs now. I wonder if I can source frog legs in Sydney...

This is a useful post for me, because it is often out of the forest. I used to eat frogs during survival material. True as you say, there are many frogs in this world. But only some toads are edible, the rest are toxic.
